Ingredients
  

  • 2 cups of black beans , dried
  • 8 cups of water
  • 2 teaspoons of cumin
  • 1 teaspoon of extra-virgin olive oil
  • 2 teaspoons of sea salt
  • Freshly ground black pepper , to taste
  • 1 piece (3 inches) of kombu
  • 3 cloves of garlic
  • Chili powder , to taste
  • Mexican oregano , to taste
  • Lime juice and zest , to taste
  • Chopped cilantro , to taste

Instructions
 

  • Place the beans in a large colander and carefully inspect them to remove any stones or debris.
  • Rinse the beans and transfer them to a large pot or Dutch oven.
  • Add water, cumin, olive oil, salt, and pepper to the pot and bring it to a boil.
  • Reduce the heat and add kombu (if using).
  • Simmer the beans uncovered until they become tender, checking them after 1 hour and every 15 minutes thereafter. This may take up to 2½ hours depending on the freshness of the beans.
