  • 3 teaspoons cumin seeds
  • teaspoons coriander seeds
  • ¾ teaspoon fennel seeds
  • teaspoons dried garlic granules
  • teaspoons smoked paprika
  • ¾ teaspoon oregano
  • None , None, Heaping ¼ teaspoon allspice
  • None , None, Heaping ¼ teaspoon sea salt
  • teaspoon sugar

Instructions
 

  • Begin by cutting the stems off the guajillo or ancho chiles using scissors.
  • Cut each chile in half and remove the seeds.
  • Place the chiles in a dry skillet over low heat.
  • Add the cumin, coriander, and fennel seeds to the skillet.
