  • 1 cup of onion , finely chopped
  • 2 cups of cider vinegar
  • 6 ounces of tomato juice
  • 1/2 tablespoon of pepper
  • 1 teaspoon of garlic powder
  • Pinch Pinch of cayenne
  • Dash of hot sauce , such as Tabasco
  • 1 teaspoon of sugar
  • 2 medium sweet onions , quartered (such as Vidalia)
  • 2 teaspoons of light brown sugar
  • 1 teaspoon of smoked paprika
  • 2 teaspoons of salt
  • Pinch Pinch of black pepper
  • One 4to 6-pound Boston butt pork roast , bone-in
  • Buns , for serving


  • To make the sauce:
  • Blend the onion with 1/4 cup of water until smooth.
  • Transfer the pureed onion to a 2-quart saucepan and add enough water to cover it.
  • Bring the mixture to a boil and then reduce the heat.
  • Cook and stir constantly until most of the water has evaporated.
