  • 2- inch piece fresh ginger , peeled and finely grated
  • 5 pounds pork butt , excess fat removed
  • 2 tablespoons canola oil
  • 2 shallots , finely diced
  • 1 cup reduced sodium chicken stock
  • 1/2 cup ketchup
  • 2 tablespoons gochujang
  • 2 tablespoons honey
  • 2 tablespoons light soy sauce
  • 1 teaspoon Chinese five-spice powder
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/4 cup rice vinegar
  • 1 tablespoon honey (or sugar)
