Ingredients

  • 1 pound sage flavored breakfast sausage
  • 6 jumbo eggs
  • 3 cups shredded potatoes, drained and pressed
  • 16 ounce curd cottage cheese
  • ยผ cup butter, melted
  • ยฝ cup onion, shredded
  • 12 ounces mild Cheddar cheese, shredded

Method

Step 1

Preheat oven to 375ยฐF. Lightly grease a 9ร—13 inch square baking dish.

Step 2

Place sausage in a large, deep skillet. Cook over medium-high heat until brown. Drain, crumble and set aside.

Step 3

In the baking dish, stir together the shredded potatoes and butter. Line bottom and sides of baking dish with the mixture. In a bowl, mix sausage, cheddar cheese, cottage cheese, onion and eggs. Pour over potato mixture.

Step 4

Bake for an hour in the oven or until a toothpick inserted into the center of the casserole comes out clean. Allow to cool for five minutes before serving.
