  • 1 uncooked turkey thigh , not cooked
  • ½ uncooked turkey breast , chopped
  • 4 cups chicken broth , or more if necessary
  • 1 diced yellow onion
  • ¾ cup uncooked white rice
  • 2 teaspoons kosher salt
  • A pinch of freshly ground black pepper
  • A pinch of cayenne pepper
  • 2 tablespoons minced green onions
  • 2 tablespoons minced red pepper
  • ¼ cup minced cilantro leaves
