  • 1/2 white onion
  • 2 red bell peppers
  • 1 green bell pepper
  • 1 roma tomato
  • 1 whole jalapeño pepper
  • 4 garlic cloves
  • 2 blocks (14-ounce each) of extra-firm tofu
  • 2 chipotle peppers plus 1 tablespoon adobo sauce from a can of chipotles in adobo
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 2 tablespoons avocado oil
  • 1/4 cup water


  • Preheat the oven to 450°F and prepare two baking sheets with parchment paper.
  • Arrange onion wedges, red and green bell peppers, tomatoes, and jalapeño on one baking sheet. Drizzle with avocado oil and sprinkle with salt. Place tomatoes cut side up and peppers cut side down. Wrap garlic cloves in foil with a drizzle of avocado oil and place on the baking sheet. Roast for 20 to 30 minutes or until onions and peppers are browned (peppers will cook faster) and tomatoes are tender.
