  • 2 pounds of smoked turkey neck bones , diced into large pieces
  • 2 ribs of celery , roughly chopped
  • 2 carrots , roughly chopped
  • 2 cloves of garlic , smashed
  • 1 medium onion , roughly chopped
  • Kosher salt and freshly ground black pepper , to taste
  • 1/4 cup of all-purpose flour
  • 1 quart of low-sodium chicken broth (or turkey stock if you have it)
  • 2 sprigs of fresh thyme
