  • 1 pound of peeled tamarind pods
  • 1 cup of water
  • 1 orange , peeled and segmented
  • 4 cups of white sugar
  • 4 tablespoons of chile-lime seasoning (e.g. , Tajin®), or more to taste
  • 1 tablespoon of butter


  • In a pot, bring tamarind pulp, water, and orange to a boil. Continue boiling for 30 minutes. Remove from heat and let it cool for 30 minutes.
  • Place a colander over a large bowl and pour the tamarind mixture into it. Mash and scrape the mixture against the side of the colander to extract all the juice and pulp into the bowl. Use a strainer to separate the remaining seeds and discard them.
  • Blend the outer casings with the juicy pulp in an electric blender.
  • Pour the blended mixture back into the large pot and add sugar, Tajin®, and butter. Stir constantly and bring to a soft boil. Heat the mixture to 240 degrees F (115 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove from heat and let it cool for about 2 hours.
  • Fill a pastry or plastic sandwich bag with the candy mixture and squeeze it onto plastic spoons. Place the spoons on a cookie sheet and chill until firm, approximately 1 hour. Optionally, coat with more Tajin® and wrap with plastic, securing it with a twist tie.
