Ingredients

  • 1 sweet potato , peeled and cut into cubes
  • 1 medium eggplant , cut into cubes
  • 1 green bell pepper , chopped
  • 1 red bell pepper , chopped
  • 2 carrots , chopped
  • 1 onion , chopped
  • 6 tablespoons of olive oil
  • 3 cloves of garlic , minced
  • 1 teaspoon of ground turmeric
  • 1 tablespoon of curry powder
  • 1 teaspoon of ground cinnamon
  • ยพ tablespoon of sea salt
  • ยพ teaspoon of cayenne pepper
  • 1 can (15 ounces) of drained garbanzo beans
  • ยผ cup of blanched almonds
  • 1 zucchini , sliced
  • 2 tablespoons of raisins
  • 1 cup of orange juice
  • 10 ounces of spinach

Instructions

  • Place sweet potato, eggplant, peppers, carrots, onion, and three tablespoons of oil in a large Dutch oven. Sautรฉ over medium heat for 5 minutes.
