  • 8 baby potatoes
  • 2 carrots , cut into 2-inch chunks
  • 2 Anaheim chile peppers , halved and seeded
  • 1 red onion , roughly chopped
  • 2 tablespoons olive oil
  • Salt to taste

  • 2 tablespoons thinly sliced fresh mint
