Ingredients
  

  • 1 tbsp of avocado oil
  • 5 cups of diced celery
  • 5 cups of finely chopped mushrooms
  • ½ medium diced onion
  • 3 lbs of lean ground turkey
  • 1 tbsp of dried parsley
  • 1 tbsp of dried thyme
  • 2 tsp of garlic powder
  • 1 tsp of ground black pepper
  • ½ tsp of crushed red pepper flakes , or to taste
  • ½ tsp of sea salt
  • ¼ cup of almond flour
  • 1 (8 oz) can of low-sodium tomato sauce
  • 2 medium zucchini , sliced into 1/4-inch slices
  • 4 (10 oz) packages of frozen cauliflower rice (such as Green Giant®)
  • cup of milk
  • 2 tbsp of butter , divided
  • ½ tsp of paprika

Instructions
 

  • Heat the avocado oil in a large skillet over medium-high heat.
  • Add the celery, mushrooms, and onion to the skillet and sauté until the onion is translucent, for about 5 to 7 minutes.
  • Crumble the turkey into the skillet.
  • Add the parsley, thyme, garlic powder, pepper, red pepper flakes, and salt to the skillet.
  • Cook the turkey mixture until it is no longer pink and has absorbed most of the liquid, for about 15 minutes.
  • Sprinkle the almond flour over the turkey mixture and cook for 1 minute.
  • Stir in the tomato sauce and cook until it thickens, for about 5 minutes.
  • Transfer the mixture to a 9x13-inch baking dish and top with sliced zucchini.
