Ingredients
  

  • 1 tbsp dried oregano
  • 1 tbsp minced fresh thyme leaves
  • 1 tbsp minced fresh savory
  • 2 tbsp sesame seeds
  • 2 tsp ground sumac (refer to note)
  • Kosher salt
  • 2 tbsp extra-virgin olive oil (plus more for serving)
  • 3 medium cloves garlic , minced (approximately 1 tbsp)
  • 1 whole chicken (3 1/2 to 4 pounds)
  • Lemon wedges (for serving)
  • Sumac and mint aioli (for serving)

Instructions
 

  • In a small bowl, combine oregano, thyme, savory, sesame seeds, sumac, and 1 tablespoon kosher salt. Stir with fingers until well mixed. Set aside half of the mixture.
  • Combine the remaining half of the mixture with 2 tablespoons olive oil and minced garlic in a separate bowl. Mix until it forms a paste.
  • Pat the chicken dry with paper towels and place it breast-side-down on a large cutting board.
  • Use sharp kitchen shears to remove the backbone by cutting along either side of it.
  • Turn the chicken over and lay it out flat. Press firmly on the breast to flatten the chicken.
