  • 14 and a half ounces of sugar
  • Half a cup of water
  • Half a cup of light corn syrup
  • A quarter teaspoon of cream of tartar
  • One cup of heavy cream , at room temperature
  • Two teaspoons of soy sauce
  • Eight tablespoons of unsalted butter , cut into eight pieces, at room temperature
  • One teaspoon of coarse sea salt


  • Prepare an 8-inch square pan by lining the bottom and sides with parchment paper.
  • In a heavy 4-quart saucepan, combine the sugar, water, corn syrup, and cream of tartar. Place the saucepan over high heat and stir occasionally until the sugar has dissolved. Cover the saucepan and let it cook for 5 minutes.
  • In a liquid measuring cup, combine the heavy cream and soy sauce. Keep this mixture and the butter nearby.
  • Remove the lid from the sugar mixture and attach a candy thermometer to the side of the pan. Once the sugar mixture reaches 230 degrees F, reduce the heat to medium and continue cooking without stirring. The syrup will turn a golden color and approach 300 degrees F, which should take about 6 to 7 minutes. Gently swirl the pan to break up any hot pockets and reduce the likelihood of crystallization.

  • Carefully add the cream and soy mixture, as well as the butter, to the pan. Stir to combine. Return the caramel to medium heat and continue stirring until the butter is completely melted. Cook until the mixture reaches 255 degrees F, and then remove from the heat.
