  • 1 and a half cups of sugar
  • A quarter cup of light corn syrup
  • 1 cup of heavy cream
  • 5 tablespoons of unsalted butter
  • 1 teaspoon of fine fleur de sel , with extra for sprinkling
  • Half a teaspoon of pure vanilla extract


  • Prepare the pan by lining an 8-inch-square baking pan with parchment paper, allowing it to hang over two sides. Lightly brush the paper with oil.
  • In a deep saucepan (6 inches wide and 4 1/2 inches deep), combine 1/4 cup water, sugar, and corn syrup. Bring the mixture to a boil over medium-high heat. Let it boil until it turns a warm golden brown, swirling the pan occasionally. Do not stir.
