Ingredients
  

  • 150 ml of Water
  • 60 ml of Crushed Strawberries
  • 14 grams of Gelatin
  • 150 grams of Granulated sugar (or sugar of your preference)
  • 150 ml of Corn syrup
  • 100 ml of Powdered sugar
  • 100 ml of Cornstarch

Instructions
 

  • Prepare a baking tray by lining it with aluminium foil. Use cooking spray to evenly coat the foil.
  • In a food processor, combine 60 ml of water and strawberries. Blend until a smooth pur�e forms. Transfer the pur�e to a bowl and mix well.
  • Sprinkle gelatin over the pur�e and let it sit for 5 minutes. Stir gently for about 10 seconds.
  • In a pan, combine 90 ml of water, corn syrup, and sugar. Heat the mixture over medium-high heat, stirring well until the sugar has dissolved.
  • Insert a candy thermometer into the pan. Once the temperature reaches 240�C, allow the mixture to boil until it reaches 115�C. Brush the sides of the pan with a wet brush to prevent sugar crystallization.
  • When the temperature drops below 115�C, remove the pan from heat and pour the mixture into a heat-resistant measuring jug with a short spout.
  • Using a hand mixer on medium speed, beat the mixture in the jug.
  • Gradually drizzle the syrup mixture from Step 6 into the bowl with the strawberry pur�e.
  • Increase the mixer speed to maximum and continue mixing until stiff peaks form and the mixture has a slight glaze. This should take approximately 10 minutes.
  • Pour the mixture into the prepared baking tray lined with foil. Allow it to set for 10 hours at room temperature without refrigerating.
