  • 4 chicken breasts , approximately weighing 2 pounds in total
  • 3 cups of buttermilk
  • Kosher salt and freshly ground black pepper
  • 4 mozzarella cheese sticks
  • Vegetable oil , for frying
  • 2 celery stalks with leaves attached
  • One 14.2-ounce box of Cheddar crackers , like Cheez-It, equivalent to about 5 cups
  • Ranch sauce , for serving

  • Make deep slits crosswise into each chicken breast, about 3/4 inch apart, without cutting through. Cut each breast in half lengthwise.
  • In a large bowl, whisk together buttermilk, 2 teaspoons salt, and 1/4 teaspoon pepper. Add chicken and toss to coat. Cover and refrigerate for at least 2 hours, or overnight.
  • Cut each cheese stick in half crosswise, creating 8 pieces. Freeze until solid, approximately 2 hours.
  • In a large Dutch oven or heavy pot, fill with 3 to 4 inches of vegetable oil. Heat over medium heat until the temperature reaches 350 degrees F.
