  • 4 small sugar pumpkins (1 1/2 to 2 pounds each; 675 to 900g)
  • 1 large skin-on kabocha squash (about 2 pounds; 900g) , halved and seeded
  • Drizzle of extra-virgin olive oil
  • Pinch Pinch of kosher salt and freshly ground black pepper
  • 2 tablespoons (30ml) extra-virgin olive oil
  • 1 pound (450g) shiitake mushrooms (or a mix of mushrooms , such as oyster, chanterelles, and beech), stemmed, cleaned, and thinly sliced (see note)
  • Pinch Pinch of kosher salt and freshly ground black pepper
  • 8 ounces (225g) lacinato kale (a.k.a. dinosaur , Tuscan, or black kale), tough stems removed, leaves cut into 1-inch pieces
  • 4 tablespoons (60g) unsalted butter , cut into 4 pieces
  • 2 medium shallots , finely minced (about 1/2 cup; 80g)
  • 1 medium garlic clove , minced
  • 2 tablespoons chopped fresh thyme leaves
  • 1/4 cup (60ml) sherry
  • 1 tablespoon (15ml) sherry vinegar
  • 2 cups (475ml) heavy cream
  • 1 cup (240ml) whole milk
  • 1/2 teaspoon ground cinnamon

  • Adjust the oven rack to the center position and preheat it to 350ยฐF (180ยฐC).
  • Line a rimmed baking sheet with parchment paper.
  • Use a sharp knife to cut the top of each pumpkin off in one piece, similar to making a jack-o'-lantern.
  • Carefully run the knife along the inside of the pumpkin to loosen the seeds and stringy pulp. Use a spoon to scoop them out and clean the inside of the pumpkin. Remove the seeds and pulp from the tops as well. Repeat with the remaining pumpkins.
  • Place the kabocha squash halves and pumpkins on a work surface.
  • Drizzle olive oil over the cut and inner surfaces of the kabocha squash, pumpkins, and pumpkin tops. Rub the oil evenly with your hands to coat them. Season with salt and pepper.
  • Place the pumpkin tops on the pumpkins and set them on the prepared baking sheet. Place the kabocha squash halves, cut side down, on the same baking sheet.
  • Roast the kabocha squash until it is tender and can be easily pierced with a paring knife, and the sugar pumpkins have slightly softened. This should take about 45 minutes to 1 hour. Lift the pumpkin tops to let the steam escape and set all the roasted squash aside to cool on the baking sheet.
  • Once the kabocha squash has cooled, use a large spoon to scoop the flesh into a medium bowl
