Chicken Fajita Bake
- 2 lbs boneless chicken breasts , diced
- 1 tbsp vegetable oil
- 1 large tomato , diced
- 1 green bell pepper , cut into strips
- ½ large onion , cut into strips
- ¾ cup water
- 2 packets (1.27 oz each) fajita seasoning
- 10 corn tortillas (6 inches) , cut into quarters
- 1 can (16 oz) pinto beans , rinsed and drained
- 2 cups shredded Cheddar cheese
- 1 can (16 oz) black beans , rinsed and drained
- ¼ cup green onions , chopped
- ¼ cup chopped cilantro
- Preheat the oven to 450 degrees F (230 degrees C).
- Grease a 9x13-inch baking pan.
- Heat a skillet over medium heat.
