  • 2 tablespoons of chopped chives
  • 2 tablespoons of extra-virgin olive oil
  • 1 garlic clove
  • ยผ teaspoon of onion powder
  • 4 large eggs
  • ยผ teaspoon of sea salt
  • 2 teaspoons of extra-virgin olive oil
  • 3 ounces of spinach
  • 4 English muffins
  • 4 tomato slices
  • Thinly sliced red onion
  • Avocado slices
  • Microgreens or sunflower sprouts
  • Hot sauce

  • Prepare the goat cheese spread by combining the goat cheese, chives, olive oil, garlic, and onion powder in a small bowl until smooth and well-mixed. Set aside.
  • In a medium bowl, whisk together the eggs and salt.
