Ingredients
  

  • 4 ounces of goat cheese
  • 2 tablespoons of chopped chives
  • 2 tablespoons of extra-virgin olive oil
  • 1 garlic clove
  • ¼ teaspoon of onion powder
  • 4 large eggs
  • ¼ teaspoon of sea salt
  • 2 teaspoons of extra-virgin olive oil
  • 3 ounces of spinach
  • 4 English muffins
  • 4 tomato slices
  • Thinly sliced red onion
  • Avocado slices
  • Microgreens or sunflower sprouts
  • Hot sauce

Instructions
 

  • Prepare the goat cheese spread by combining the goat cheese, chives, olive oil, garlic, and onion powder in a small bowl until smooth and well-mixed. Set aside.
  • In a medium bowl, whisk together the eggs and salt.
  • Heat olive oil in a large nonstick skillet over medium heat. Add the spinach and a pinch of salt, cook and toss until the spinach wilts. Evenly arrange the spinach at the bottom of the pan and reduce the heat to medium-low.
  • Pour the whisked eggs into the pan without stirring. Let the edges of the omelet begin to set for about 30 seconds. Use a spatula to gently run along the edges of the omelet and tilt the pan so that the uncooked egg from the top runs under and around the edges. Repeat this process until the omelet is almost fully cooked. Then, fold the omelet in thirds to form a long rectangular shape. Cook for an additional 30 seconds, or until the eggs are fully set. Remove from the pan and slice crosswise into four rectangular pieces.
  • To assemble the sandwiches, spread the goat cheese mixture onto each half of an English muffin. Place one slice of the omelet on the bottom half, followed by a tomato slice, red onion, avocado slices, and microgreens if desired. Repeat this process to assemble the remaining sandwiches.
