Ingredients
- 3 pounds chicken pieces including breasts, thighs, and / or drumsticks
- ยพ teaspoon lime peel
- ยฝ cup lime juice
- 1-2 tablespoons olive oil
- 3 cloves garlic
- 1 ยฝ teaspoons dried basil
- 1-2 teaspoons freshly ground black pepper
- 2 or 3 drops of cayenne pepper sauce
- ยฝ teaspoon red pepper flakes
- ยฝ teaspoon salt
Method
Step 1
Skin chicken. Rinse and pat dry.
Step 2
Place chicken bone sides up in broiler pan and broil for twenty minutes five or six inches from heat. Chicken should be lightly browned.
Step 3
Mince or crush garlic.
Step 4
Finely shred lime peel and squeeze lime juice.
Step 5
Prepare glaze. In a small bowl combine lime zest, lime juice, olive oil, garlic, crushed basil, cayenne pepper sauce, red pepper flakes, fresh pepper, and salt. Stir together.
Step 6
Remove chicken from oven and brush glaze over all sides.
Step 7
Return chicken to oven and broil for ten to fifteen minutes more, brushing with glaze off and on. Chicken pieces should be tender and no longer pink.
