  • 3 Thai green chiles , finely minced (or adjust amount based on preferred level of heat) (about 30g)
  • 2 scallions , finely minced (white and light green parts only) (about 30g)
  • 1 piece of ginger (2 inches) , minced and peeled (about 40g)
  • 2 medium cloves of garlic , finely minced (about 10g)
  • 1 stalk of lemongrass , finely minced (only tender white part) (see note)
  • 1 pound of ground chicken (454g)
  • 1 1/2 tablespoons of fish sauce (such as Red Boat) (20g)
  • 1 1/2 teaspoons of Diamond Crystal kosher salt (8g)
  • 1/2 bunch of mint , leaves finely chopped (about 30g)
  • Neutral oil or refined coconut oil , for cooking
  • 1/4 cup of turbinado sugar (60g)
  • 1 head of Bibb lettuce , leaves separated
  • Assorted pickles
  • Crispy shallots
  • Hot sauce , hoisin, or chili crisp


  • Heat the coconut oil in a small sauté pan or skillet over medium-low heat until it shimmers.
