  • 2 tablespoons of olive oil
  • Kosher salt and freshly ground black pepper

  • 2 links (8 ounces) of spicy Italian sausage , with casings removed
  • 1/2 cup of red onions , chopped
  • 1/4 teaspoon of hot Hungarian paprika
  • 1/4 teaspoon of pumpkin pie spice
  • 6 fresh sage leaves , finely chopped
  • 1 stalk of celery , finely chopped
  • 1 red bell pepper , seeded and finely chopped
  • Kosher salt and freshly ground black pepper
