  • 2 acorn squash , medium-sized
  • 1 cup of vegetable or chicken broth
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of olive oil
  • 2 teaspoons of fresh thyme leaves , plus 4 sprigs
  • Kosher salt and freshly ground black pepper
  • 4 tablespoons of butter (1/2 stick)
