Ingredients

  • Ingredients:
  • 1 cup (2 sticks) of unsalted butter
  • 30 graham crackers
  • 1/2 teaspoon of kosher salt
  • 2 1/2 cups of fudge sauce (store-bought)
  • 16 large marshmallows
  • 2 cups (480 grams) of cold heavy cream
  • One 14-ounce can of cold sweetened condensed milk
  • One 7 1/2-ounce jar of cold marshmallow creme
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of kosher salt
  • 1 chocolate bar (for garnish , to shave)

Instructions

  • Start by chilling the bowl of a stand mixer in the refrigerator.
  • In a small saucepan, melt half of the butter over medium-low heat. Cook until the milk solids in the butter have turned golden brown and smell toasty and nutty. This should take about 3 to 4 minutes. Remove from the stove and let it cool to room temperature.

  • Add the cooled brown butter to the food processor and continue processing until the mixture starts to clump together.
  • Transfer the graham cracker mixture to a pie dish. Use the flat bottom of a glass or dry measuring cup to press the crumbs evenly on the bottom and up the sides of the dish. You can freeze the crust for 30 minutes to firm up, or proceed to the next step.
  • Warm half of the hot fudge sauce to an easily spreadable consistency. Pour the fudge over the graham cracker crust and use an offset spatula to spread it evenly on the bottom and up the sides of the crust. Place the pie dish in the freezer for 1 hour until firm.
  • Repeat the process for the second pie, making the brown butter graham cracker crust and applying the fudge.
  • To toast the marshmallows, use a brûlée torch or preheat the oven to broil with an
