Ingredients

  • 1 can (14 ounces) of sweetened condensed milk
  • 1 cup of cream or milk
  • 4 and a half cups of white sugar
  • Half a cup of chilled unsalted butter , cut into cubes
  • A dash of salt
  • 1 teaspoon of vanilla extract (optional)

Instructions

  • Grease a 13x18-inch sheet pan or two 8x8-inch square pans generously with butter and set them aside.
  • In a large, heavy-bottomed saucepan, combine condensed milk, cream, sugar, salt, and butter. Stir them together.
  • Place the saucepan over medium heat and bring the mixture to a boil while stirring constantly.
  • Once the mixture boils, reduce the heat to low and continue cooking and stirring. Use a candy thermometer to check the temperature, which should be between 234 and 240 degrees F (112 to 116 degrees C). Alternatively, you can drop a small amount of the mixture into cold water and see if it forms a soft ball that flattens when removed and placed on a flat surface. This process should take approximately 20 minutes.
  • When the mixture turns a light tan color, remove it from the heat. Be careful and beat it vigorously with a wooden spoon until it cools and thickens. Stop beating when you notice the texture changing from smooth to grainy. Add vanilla extract and mix it in.
  • Pour the mixture into the prepared pan. Do not scrape any crystallized bits from the bottom of the pan, as it may cause the entire batch to crystallize.
