  • Kosher salt
  • Escarole , coarsely chopped
  • Garlic (1 head) , cloves separated but not peeled
  • Butter (6 tablespoons)
  • Fresh sage leaves (10 to 12) , torn
  • Butternut squash (1 pound) , peeled and cut into bite-size pieces
  • Freshly ground pepper
  • Chicken stock (1 1/2 cups)
  • All-purpose flour (3 tablespoons)
  • Milk (3 cups)
  • Freshly grated nutmeg
  • Pure pumpkin puree (Two 15-ounce cans)
  • Eggs (3)
  • Fresh ricotta (2 cups)
  • Freshly grated Parmigiano-Reggiano (2 cups)
  • No-boil flat lasagna (1 box)
  • Italian Fontina , Fontina Val DAosta, or Gouda cheese (12 ounces), shredded

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Boil a large pot of water and add salt. Cook the escarole in the boiling water for 5 minutes, then drain.
  • In a saucepan, simmer the garlic cloves in water for 20 minutes. Drain and let cool. Remove the garlic pulp from the jackets into a bowl and mash with a fork.
  • In a medium saucepan, melt 3 tablespoons of butter over medium heat. Stir in the sage, then add the squash. Season with salt and pepper. Add the chicken stock and cook for 15 minutes, stirring occasionally, until the stock is absorbed and the squash is lightly browned and tender. Remove from heat.
  • In another medium saucepan, melt the remaining 3 tablespoons of butter over medium heat. Whisk in the flour for 1 minute. Then whisk in the milk and mashed garlic. Season with salt, pepper, and nutmeg. Cook until slightly thickened.
  • In a small bowl, whisk together the pumpkin puree, 2 eggs, salt, and pepper.
  • In another bowl, whisk together the ricotta, half of the Parmigiano-Reggiano, and the remaining egg.
  • Preheat the oven to 375 degrees F. Soak the lasagna sheets in water for 5 minutes.
