  • 4 tablespoons unsalted butter
  • 1 small yellow onion , finely chopped
  • 3 cloves garlic , thinly sliced
  • 10 whole sage leaves and 2 tablespoons chopped sage (additional leaves for serving , if desired)
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon pumpkin pie spice
  • 1 (15-ounce) can pure pumpkin
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups whole-milk ricotta cheese
  • 3 cups shredded mozzarella cheese
  • Pinch Pinch of crushed red pepper flakes
  • 1 tablespoon olive oil

  • Place an oven rack in the center position of the oven and preheat the oven to 425 degrees F.
