Ingredients
  

  • Salt and pepper
  • 12 lasagna noodles
  • 4 tablespoons unsalted butter
  • 1 small yellow onion , finely chopped
  • 3 cloves garlic , thinly sliced
  • 10 whole sage leaves and 2 tablespoons chopped sage (additional leaves for serving , if desired)
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon pumpkin pie spice
  • 1 (15-ounce) can pure pumpkin
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups whole-milk ricotta cheese
  • 3 cups shredded mozzarella cheese
  • Pinch Pinch of crushed red pepper flakes
  • 1 tablespoon olive oil

Instructions
 

  • Place an oven rack in the center position of the oven and preheat the oven to 425 degrees F.
  • In a large pot, bring salted water to a boil. Cook the lasagna noodles for 1 minute longer than the package instructions suggest for al dente texture. The noodles should be tender enough to roll without cracking. Rinse with cold water and drain well. Lay the noodles in a single layer on a baking sheet.
  • In a medium saucepan, melt the butter over medium heat. Add the onion, garlic, and whole sage leaves. Cook and stir occasionally until the onions are softened, which takes about 6 to 7 minutes.
