  • 6 cups (680 grams) of confectioners' sugar , with extra for dusting and if needed
  • 1/4 cup (65 grams) of smooth peanut butter , divided

  • In a medium bowl, combine the potatoes, water, and vanilla until the mixture is smooth. Allow it to cool to room temperature, which should take around 30 minutes.
  • In the large bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the cooled potatoes and butter on medium-high speed until they are smooth, which should take approximately 30 seconds. Scrape down the sides of the bowl, then add 3 cups of confectioners' sugar and beat until the sugar is fully combined and the texture is creamy, which should take about 30 seconds.
