  • 1 medium-sized eggplant , cut in half lengthwise
  • ยฝ tsp kosher salt
  • 5 ยฝ tbsp olive oil , divided
  • 1 garlic bulb
  • ยผ cup tahini (sesame seed paste)
  • 2 tbsp lemon juice , or more to your preference
  • ยผ tsp ground cumin
  • โ…› tsp smoked paprika
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped fresh parsley
  • ยฝ tsp lemon zest

Instructions

  • Sprinkle salt on the cut sides of the eggplant and let it sit for 20 to 30 minutes. Pat dry with paper towels.
  • Preheat the air fryer to 400 degrees F (200 degrees C).
