Ingredients
ย ย

  • 5 shallots , sliced thinly
  • Canola or vegetable oil , for frying
  • Salt (preferably kosher)
  • Salt and pepper (preferably kosher and freshly ground)
  • 2 pounds haricots verts or thin green beans , with ends trimmed
  • 2 tablespoons butter , plus additional for greasing the casserole
  • 1 pound mushrooms (any variety button , cremini, wild, etc.), cleaned and roughly chopped
  • 3 shallots , finely minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup half-and-half
  • Fresh parsley or chervil (optional) , for garnish

Instructions
ย

  • Preheat the oven to 400 degrees F.
  • For the crispy shallot topping: Place the shallots in a small saucepan and pour enough canola or vegetable oil to cover them. Heat the pan on medium heat and cook the shallots, stirring occasionally, until they turn a medium brown color, approximately 4 minutes. Drain the shallots using a fine-mesh sieve, saving the oil for later use. Transfer the drained shallots to a plate lined with paper towels and pat them dry with another paper towel. Sprinkle with salt and set aside.
  • For the green bean casserole: Fill a large bowl with water and ice. Bring a large pot of salted water to a boil.
  • Place the green beans in the boiling water and cook until they are crisp-tender, approximately 5 minutes. Drain the beans and immediately transfer them to the ice water to stop the cooking process. Drain again.
  • Butter a shallow 3-quart casserole dish and set it aside.
  • In a large skillet, melt the butter. Sautรฉ the mushrooms until they are browned and any liquid released has evaporated, about 6 minutes. Add the minced shallots and sautรฉ for an additional 2 minutes until slightly softened. Sprinkle the flour over the mushrooms and continue to sautรฉ until the flour coats the mushrooms and turns golden, approximately 2 minutes. Gradually pour in the broth while stirring. Stir
