  • Kosher salt
  • 6 medium-sized orange bell peppers
  • 8 ounces of elbow macaroni
  • 1 1/4 cups of half-and-half
  • 8 ounces of cream cheese , softened
  • 4 ounces of mild Cheddar cheese , shredded (approximately 1 1/2 cups)


  • In a large pot, bring generously salted water to a boil.
  • Prepare a large bowl filled with ice water.
  • Cut the tops off the peppers and set them aside. Remove the seeds and membranes from the peppers.
  • Place the peppers and their tops in the boiling water and cook for approximately 2 to 3 minutes until they become tender.
  • Transfer the peppers to the ice bath to cool.
  • Once cooled, remove the peppers from the ice bath and use a sharp knife to carve a jack-o-lantern face on one side of each pepper.
  • Bring the water in the pot back to a boil and add the macaroni. Cook for about 6 minutes until the macaroni is al dente.
  • Reserve 1 cup of the pasta water and drain the macaroni without rinsing it.
  • In a large saucepan, heat the half-and-half over medium heat until it simmers.

  • Add the cream cheese to the saucepan and stir until melted.
