  • 4 lemons
  • 2 tablespoons coarsely cracked black peppercorns
  • Kosher salt
  • 1 onion , cut into quarters
  • 2 stalks celery , cut into chunks
  • 3 sprigs of thyme
  • 9 slices of bacon , approximately 8 ounces
  • 4 tablespoons unsalted butter
  • Classic Gravy (recipe to follow)
  • 10 tablespoons unsalted butter (plus more if needed)
  • Turkey neck and giblets (discard the liver)
  • 1 onion , cut into quarters
  • 1 carrot , chopped
  • 1 stalk celery , chopped
  • 3 sprigs of thyme
  • 2 bay leaves
  • 1/2 cup dry white wine
  • 8 cups low-sodium chicken or turkey broth (plus more if needed)
