  • Salt and ground black pepper to taste
  • 1 bay leaf
  • 3 cartons (32 ounces each) of fat-free , low-sodium chicken broth
  • ยฝ cup of fresh lemon juice
  • Zest of 1 lemon
  • 8 ounces of cooked chicken breast , chopped
  • 1 package (8 ounces) of baby spinach leaves
  • Optional: Sliced lemon for garnish
  • Optional: ยผ cup of grated Parmesan cheese
