  • 8 cups of curly kale leaves , chopped (from a 10-ounce bunch)
  • 1 1/2 cups of finely shredded green cabbage (approximately 1/4 small head)
  • 3/4 cup finely chopped roasted salted peanuts
  • 3/4 cup fresh cilantro
  • 4 scallions , sliced (only the green parts)
