Ingredients
  

  • 4 russet potatoes , approximately 4 to 5 inches long, cleaned and peeled
  • 1 gallon of water
  • 2 tablespoons of sambal oelek
  • 3 tablespoons of rice wine vinegar
  • 1 tablespoon of white vinegar
  • 1 tablespoon of granulated sugar
  • 3 green onions , finely chopped
  • 1 1/2 teaspoons of soy sauce
  • 1 teaspoon of minced garlic
  • 1/2 teaspoon of minced ginger
  • 2 quarts of canola oil
  • Salt and pepper to taste
  • 1 teaspoon of toasted sesame seeds

Instructions
 

  • Slice the potatoes into 3/8-inch thick slices.
  • Stack the potato slices and cut them into 3/8-inch square pieces.
  • Place the cut potatoes in a large bowl of water and let them soak for 30 minutes to remove excess starch and prevent oxidation.
  • While the potatoes are soaking, prepare the sauce by combining all the ingredients in a nonreactive pan. Heat the mixture over medium-high heat and then reduce it by half, simmering.
  • In a heavy stock pot, heat the oil over medium heat until it reaches a temperature of 325 degrees F. Use a candy thermometer to check the temperature.
  • Remove the potatoes from the water and pat them dry. Carefully add 2 handfuls of potatoes to the hot oil, ensuring that there is at least 1 inch of oil above the potatoes. Cook for 5 to 7 minutes or until the potatoes are light brown.
  • Use a slotted spoon to remove the potatoes from the oil. Shake off any excess oil and place the cooked potatoes on a cooling rack. Repeat this process until all the potatoes have been par-cooked.
