  • ½ of a medium-sized yellow squash , thinly sliced
  • ½ of a medium-sized green bell pepper , diced
  • ½ of a medium-sized yellow onion , diced
  • ½ cup diced jalapeno peppers
  • 1 package (12 oz) of cubed tofu
  • 3 tbsp soy sauce
  • 1 tbsp garlic powder
  • 5 flour tortillas
  • 2 tbsp plant-based sour cream

Instructions
 

  • In a large nonstick skillet, melt the margarine over medium heat.
  • Add the squash, bell pepper, onion, and jalapeno to the skillet.
