  • 2 tbsp olive oil , separated
  • 4 large hot Italian sausage links
  • 6 bone-in , skin-on chicken thighs
  • ½ lb assorted sweet peppers , seeded
  • 4 large Yukon Gold potatoes , quartered
  • 1 small red onion , sliced
  • ½ medium yellow onion , sliced
  • 2 tsp dried Italian herbs
  • 2 tsp kosher salt
  • Freshly ground black pepper , to taste
  • 1 tbsp chopped fresh Italian parsley


  • Preheat the oven to 450 degrees F (230 degrees C).
  • Heat 1 tablespoon of oil in a skillet over medium heat. Add the sausage links and cook until they are browned and the fat starts to render, around 3 minutes per side. While cooking, lightly pierce the sausages in several places with a sharp knife to release the fats and juices.
