  • 16 ounces of cream cheese , softened
  • 2/3 cup plus 2 tablespoons of sugar
  • 1 teaspoon of vanilla extract
  • 2 large eggs , beaten and at room temperature
  • 8 medium red baking apples (such as Gala)
  • 1/2 cup of graham crackers , crushed (approximately 5 whole crackers)
  • 1/8 teaspoon of ground cinnamon
  • 2 tablespoons of unsalted butter , melted
  • Caramel sauce , prepared, for serving
  • 1/2 cup of walnuts , toasted and roughly chopped

Instructions
 

  • In a medium bowl, mix together the cream cheese, 2/3 cup sugar, and vanilla using a rubber spatula until the mixture is smooth.
