  • Ingredients:
  • 1/2 cup plus 1 tablespoon granulated sugar
  • A generous pinch of fine salt
  • 1/2 cup all-purpose flour
  • For the Churros:
  • 7 tablespoons unsalted butter
  • 2 large eggs , lightly beaten
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup granulated sugar
  • A pinch of fine salt
  • 1/2 cup fresh mango chunks (about 1/2-inch) , or frozen and thawed
  • 1 tablespoon unsalted butter

  • To make the churros, preheat the oven to 425 degrees F and place the oven racks on the top and bottom thirds. Line 2 baking sheets with parchment paper.
  • In a small saucepan over medium heat, bring 4 tablespoons of butter, 1 tablespoon of sugar, the salt, and 1/2 cup of water to a boil. Stir constantly and add the flour until the mixture forms a ball. Transfer the mixture to a large bowl and let it cool to the touch. Use an electric mixer on medium-low to beat the dough until cool.
  • Add the eggs one at a time to the dough, beating until well incorporated. Transfer the dough to a large pastry bag fitted with a 1/2-inch wide star tip.
  • Pipe the batter onto the prepared baking sheets in 2-inch lengths, leaving about 2 inches of space between each churro. Bake for 15 to 18 minutes, rotating the baking sheets from top to bottom halfway through. Once golden brown, let the churros sit on the baking sheets for a few minutes.
  • In a microwave-safe bowl, melt the remaining 3 tablespoons of butter. In another medium bowl, combine 1/4 cup of sugar and 1 teaspoon of cinnamon. Dip the churros in the melted butter, allowing any excess to drip off, and then coat them in the cinnamon-sugar mixture. If the mixture becomes too wet, make a fresh batch with the remaining 1/4 cup
