  • Powdered sugar , for sprinkling
  • 1 cup firmly packed dark brown sugar
  • 1/2 cup sorghum syrup
  • 4 tablespoons unsalted butter
  • 5 ounces sweetened condensed milk
  • 15 extra-large marshmallows
  • Flaky sea salt (e.g. , Maldon), for sprinkling

  • Prepare a glass of ice water and set it aside.
  • Line a cookie sheet with waxed paper and sprinkle it generously with confectioners' sugar. Set aside.
  • In a saucepan over medium heat, combine the brown sugar, sorghum, and butter. Heat until the butter and sugar melt, which should take around 3 to 5 minutes.
  • Add the condensed milk to the saucepan and bring it to a simmer. Cook for about 1 minute.
  • Lower the heat and continue to cook the mixture, stirring constantly, until it reaches a temperature of 240 degrees F on a candy thermometer. Alternatively, you can test if a soft ball forms when a spoonful of the caramel is dropped into the glass of ice water. This process should take around 15 to 20 minutes.
  • Let the caramel mixture stand for 5 minutes.
  • Skewer the marshmallows and dip them into the caramel, ensuring that the sides are covered but the tops are not.
  • Place the caramel-coated marshmallows on the prepared cookie sheet to cool.
  • While the caramel is still setting, sprinkle the dipped sides of the marshmallows with a little flaky sea salt.
  • You can serve the caramel-coated marshmallows immediately or wrap each candy in waxed paper for later enjoyment. Note that if the weather is humid, the candies may not hold up well over time.
