  • 1 ½ cups chopped onion
  • 1 ½ tsp kosher salt
  • 2 tbsp tomato paste
  • 1 (2 lb) butternut squash peeled , seeded, and cut into 1-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 pinch cayenne pepper
  • ½ cup heavy cream
  • 2 tbsp pure maple syrup
  • 1 tbsp chopped fresh parsley , or to taste
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 3 large sweet onions , chopped
  • 1 large shallot , thinly sliced
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 2 tbsp sherry
  • ½ cup low-sodium beef broth
  • 2 sprigs fresh thyme
  • 6 slices sourdough bread
  • 6 tsp butter , softened
  • 6 oz shredded Gruyere cheese

  • In a large pot, melt the butter over medium-low heat.
  • Add the onion and 1/2 teaspoon of kosher salt to the pot. Cook for about 10 minutes, stirring frequently, until the onion is tender but not browned.
  • Increase the heat to medium-high and stir in the tomato paste. Cook for about 2 minutes, stirring frequently, until the mixture begins to caramelize and brown.
