Ingredients
- 3 cups short grain rice
- Half a chicken cut into pieces
- 8 cups water
- 6 cups of chicken stock
- 2 artichokes
- 2 medium-sized red peppers
- 2 tomatoes
- 1/2 lemon
- 1 cup olive oil
- Black pepper
- Garlic
- Parsley
- A strand of saffron
- A sprig each of rosemary and thyme
- Salt to taste
Method
Step 1
Fry the chicken in olive oil then add browned chicken pieces into a skillet with water.
Step 2
Bring to a boil.
Step 3
Simmer for 30 minutes.
Step 4
Cut artichokes and red pepper fry together in another skillet. Add tomato, garlic, and olive oil to skillet. Add rice to skillet. Stir.
Step 5
Add the chicken, chicken stock, artichokes, red peppers, lemon juice, black pepper, parsley, thyme, rosemary. Grind saffron and add to ingredients. Add salt.
Step 6
Increase heat to boiling for 10 minutes.
Step 7
Lower heat and simmer for 10 more minutes.
Step 8
Let stand for 5 minutes covered
