Ingredients
- 2 tablespoons oil (grapeseed or vegetable)
- 1 medium white onion, sliced
- 2 leeks, thinly sliced (use only white part)
- 2 bay leaves
- 1 tablespoon minced fresh lemongrass, or 1 teaspoon dried lemongrass
- 1 tablespoon ginger, chopped
- 3 cloves garlic, minced
- 2 limes, juiced
- 30 oz coconut milk
- 4 cups low-sodium chicken stock (or fish stock)
- 2 tomatoes, sliced
- 1 lb. cubed firm white fish, such as tilapia, rockfish, snapper, or halibut
- Salt and pepper
Method
Step 1
Add oil to large stock pot and warm over medium heat until oil begins to shimmer.
Step 2
Add onion, leeks, bay leaves, lemongrass, ginger, garlic, and juice from two limes and sautรฉ. Stir frequently for about five minutes.
Step 3
Add the coconut milk and chicken or fish stock and bring mixture to a low simmer. Simmer 20 minutes.
Step 4
Add tomato and fish, along with salt and pepper to taste, and simmer an additional 10 minutes or until fish is cooked through.
Step 5
Serve immediately.
