  • 1 cup of raw brown rice
  • 2 cups of water
  • 2 tablespoons of olive oil
  • 1 minced clove of garlic
  • 1 package (12 ounces) of extra-firm tofu , drained and diced
  • 1 ร‚ยพ cups of marinara sauce , divided
  • Salt (to taste)
  • Ground black pepper (to taste)
  • 2 red bell peppers , halved and seeded
  • 2 orange bell peppers , halved and seeded
  • 2 cups of shredded mozzarella cheese
  • 8 slices of tomato

Instructions
