  • 20 ounces high-quality whole milk , preferably from grass-fed cows, divided (approximately 2 1/2 cups; 565g)
  • 8 ounces high-quality heavy cream , preferably from grass-fed cows (approximately 1 cup; 225g)
  • 2 ounces high-quality chocolate , with cocoa solids between 60-75%, preferably from a single origin (approximately 1/3 cup; 55g)
  • 1/2 ounce refined coconut oil (approximately 1 heaping tablespoon; 15g)


  • In a 3-quart saucier, combine sugar, cornstarch, and salt. Whisk until there are no lumps.
  • Add 14 ounces of milk (about 1 2/3 cup; 396g) and whisk to combine.
