  • 3/4 ounce of Dutch-processed cocoa powder (approximately 1/4 cup or 20g) , like Valrhona
  • 5 ounces of piping hot espresso or strong brewed coffee (about 2/3 cup or 140g)
  • 2 ounces of crème de cacao or another dark liqueur (around 1/4 cup or 55g) see notes
  • 2 ounces of Cardamaro or a mild amaro (about 1/4 cup or 55g) see notes
  • 1/2 ounce of vanilla extract (approximately 1 tablespoon or 15g)
  • 5 large eggs (about 8 3/4 ounces or 245g)
  • 3 1/2 ounces of sugar (about 1/2 cup or 100g)
  • 1/4 teaspoon (1g) of Diamond Crystal kosher salt (if using table salt , use about half the amount by volume or the same weight)
  • 24 ounces of mascarpone (equivalent to three 8-ounce containers or 680g) , straight from the refrigerator
  • About 30 ladyfingers , either store-bought or homemade
  • Dutch-processed cocoa powder , for dusting


  • In a deep bowl, mix together cocoa powder, hot espresso, crème de cacao, Cardamaro, and vanilla extract until well combined. Set aside.
  • Fill a 2- or 3-quart saucier with a few inches of water and bring it to a boil. Reduce the heat to maintain a steady supply of steam.
  • In the bowl of a stand mixer, combine eggs, sugar, and salt. Stir using a flexible spatula.
  • Place the bowl over the steaming pot, ensuring it doesn't touch the bottom. If needed, use a crumpled strip of foil as a booster seat.
  • Cook, stirring and scraping constantly, until the mixture reaches a temperature of 160°F (71°C). This should take about 5 minutes.
  • Transfer the mixture to a stand mixer fitted with a whisk attachment.
  • Whip on high speed until the eggs become foamy and increase in volume, resembling soft-serve ice cream when dropped from the whisk. This can take 5 to 10 minutes, depending on your mixer.
  • Reduce the speed to medium and gradually add the mascarpone, around 1/4 cup at a time. There's no need to wait between additions.
  • Once the mascarpone is incorporated, pause to scrape the bowl with a flexible spatula. Then resume whipping on medium-high speed until the mixture becomes homogeneous and thick, which should take about 5
