  • 1 and 1/3 cups of water
  • 3 tablespoons of olive oil
  • 2 tablespoons of liquid smoke flavoring (optional)
  • 2 packages of fajita seasoning (1 ounce each)
  • 4 large avocados , peeled, pitted, and sliced into 1/2-inch wedges
  • 4 large bell peppers , stemmed, seeded, and sliced into 1/2-inch wedges
  • 1 extra large onion , sliced into rings and separated
  • 12 flour tortillas (6 inches each)


  • In a bowl, mix together water, oil, liquid smoke, and fajita seasoning.
  • Pour the mixture into a resealable plastic bag.
  • Add avocados, bell pepper, and onion to the bag.
  • Coat the vegetables with the marinade.
  • Squeeze out excess air from the bag and seal it.
  • Place the bag in the refrigerator and marinate for 1 hour to overnight, turning occasionally.
  • Preheat the oven to 225 degrees F (110 degrees C).
  • Stack the tortillas and wrap them in aluminum foil.
