  • 2 cans (14.5 ounces each) undrained stewed tomatoes
  • 1 pound of chicken thighs , skinless and boneless, cut into pieces
  • 1 can (14.5 ounces) reduced-sodium chicken broth
  • 1 green sweet pepper , chopped
  • 1 large onion , chopped
  • 2 stalks of celery , chopped
  • 3 cloves of garlic , minced
  • 1 tablespoon of Cajun seasoning
  • ยผ teaspoon of ground black pepper
  • ยผ teaspoon of cayenne pepper
  • 1 pound of fresh or thawed medium shrimp , peeled and deveined
  • 4 cups of hot cooked white or brown rice
