  • 1 pound of rainbow fingerling or baby potatoes , halved lengthwise
  • 1 bunch of scallions , cut into thirds
  • 3 tablespoons of Dijon mustard
  • 1 tablespoon of extra-virgin olive oil
  • 2 tablespoons of finely chopped fresh dill
  • 2 tablespoons of finely chopped fresh parsley
  • Kosher salt and freshly ground black pepper
