  • 8 bone-in , skin-on chicken thighs (2 1/2 to 3 pounds)
  • 1 pound of baby rainbow carrots , tops trimmed
  • Kosher salt and freshly ground black pepper
  • 1 pound of rainbow fingerling or baby potatoes , halved lengthwise
  • 1 bunch of scallions , cut into thirds
  • 3 tablespoons of Dijon mustard
  • 1 tablespoon of extra-virgin olive oil
  • 2 tablespoons of finely chopped fresh dill
  • 2 tablespoons of finely chopped fresh parsley
  • Kosher salt and freshly ground black pepper
